One of the things that puts me off of cooking a Sunday roast is the smell of the food throughout the house both at the time of cooking and for hours afterwards. A revelation for me today was cooking the roast with different fat resulting in not only a tasty dinner but no nasty cooking smells. On top of that possibly, slightly healthier too.
The secret ingredient for the roasties was coconut oil.
The potatoes were prepared in the normal way but instead of drizzling olive oil over them, I used small pieces of flavourless coconut oil. Once the meat was cooked, then I drizzled juices of the meat of the roasties and continued to cook them as normal.
Give them a try, they were possibly the best roasties I’ve ever cooked.
