Over the last couple of years I’ve developed a bit of a craving for courgettes and it seems like I am not the only one as this once unloved veg has become such a healthy eaters favourite that in January 2017 in the UK, a shortage of courgettes led to a courgette-crisis! But how do you cook courgettes?
Up until a few years ago the most exciting thing that I cooked with courgettes was to fry them in butter. If this sounds like you then this blog is just for you. Here’s my top tips for cooking courgettes.
Courgetti (aka courgette spaghetti, zucchini noodles, zucchini pasta)

Courgetti is courgette which has been spiralled. You can use this as an alternative to using pasta spaghetti, so is a great alternative if you are trying to reduce your carbs. You will find courgetti in most large supermarkets these days but if you invest in a sprialiser you can make these much more cheaply at home. Grated Courgette

I discovered a love for grated courgette almost by accident a few years ago. Grated courgette is great for a quick, easy and healthy vegetable side dish, or you can use it to bulk out a larger stir-fry with lots of other ingredients. Here’s my recipe for stir-fried courgette and garlic which you just have to try.
Courgette Ribbons in salad

If you’ve not tried courgette ribbons in salads then make sure you add them to your next salad, you will never believe just how good they taste. They are so simple to make, just use your vegetable peeler to slice the courgette. Add them to your salad and gently toss in salad dressing with your other ingredients.
Roasted Courgette
Along with many vegetables, courgettes can be roasted. Unlike veg such as squash, courgettes do not need to be roasted for long, so they are great when you are cooking against the clock.
Simply place roughly chopped courgettes in an oven-proof dish and drizzle with olive oil or melted coconut oil and season with salt and pepper to taste. Cook at 180c for 20-30 mins until lightly golden, turning half way through the cooking time.
Courgette Cake
It might sound hard to believe but yes, you can make cakes from courgettes.

Here’s one of my favourite recipes, but don’t just take my word for it, there are lots of recipes for courgette cake online, just ask Google! If you love baking but want to bake things that are just a teeny bit more healthy then this is a great choice.
